We eat a lot of chicken as a healthier, lower fat meat, and are always looking for new ways to spice up our meals. Ground chicken is a great base for quick and easy burger patties, but they were honestly just too bland. I tried adding just a few ounces of sauted shiitake mushrooms to a chicken patty recipe and WOW - we couldn't believe the flavor! The full-bodied flavor of shiitakes works wonders with bland recipes, and these patties are juicier and more flavorful than any sandwich we've had at our favorite restaurants. Our previous favorite was a blackened mahi mahi sandwich, but in our opinion, this beats it and it's far less pricey. The recipe works with fresh shiitakes or reconstituted dried shiitakes. This recipe is definitely one to try!
