Everyone loves the basics during the holidays: turkey and dressing, mashed potatoes and gravy. But you can add unique touches to your gravy that adds a savory depth of flavor to the gravy you want to lavish over the turkey, dressing and mashed potatoes. I always have to double or triple this recipe, because it adds so much to the meal and to left-overs. Even if you have mastered the art of cooking a moist turkey, a luscious gravy adds moisture and flavor, and the shiitakes take the flavor up a few notches. You can use fresh shiitakes or reconstituted dried shiitakes. If you are reconstituting them, add the water or broth you soaked them in to the gravy. Why waste flavor?
